Make Up Monday- Peanut Butter Apple Bites

It is that time of the week again…for most of us the weekend is over and it is back to work.  Some people have off today for Presidents Day, so you’ll feel it tomorrow.  I actually have off  but not because of Presidents Day.  I had to work on Saturday so essentially this is my Sunday.  Never the less I bring you Make Up Monday.  Last week’s Fat Friday was Peanut Butter Cookie Pie so the ingredient I’m experiment with to make this “healthy” treat for Make Up Monday is peanut butter.  I’ve told myself I can’t resort to my usual tricks of just adding copious amounts of butter and sugar to a recipe.  There is none of that in here but it is still sweet.  Downside is it sticks to your mouth and is a little gooey to pick up…but hey, this isn’t my forte.

Peanut Butter Apple Bites

What you will need

  • 4 small apples of your choice

  • 1/4 cup of honey*
  • 2 table spoons of cinnamon
  • 2 cups of uncooked oatmeal
  • 8 oz jar of natural peanut butter

Put it together

  • Peel and cube the apples

  • Coat in honey and cinnamon and bake at 350 for 30 minutes.

  • Cook oatmeal on stove top in 4 cups of boiling water.
  • When apples are finished combine with the oatmeal and peanut butter and mix completely.
  • Spoon onto wax paper.

I’ve been sitting here eating them warm and they are pretty good (not great, a little butter would have gone a long way in this recipe) and they are filling for that matter.  There’s something to do with whole ingredients keeps you fuller bla bla bla GO HEALTHY FOOD!  Well everyone, try to stick to your diets until Fat Friday! 🙂

*Anecdote about honey.  When Dan and I were in the store buying the honey we were stalked (sort of).  This woman followed us (who knows for how long because we picked up a lot of stuff after the honey) to the register and started talking to us about our honey container.  Apparently the man who designed the little bear container is her neighbor and was in the store.  We smiled and were polite and made small talk (something Dan is not good at).  She went away, only to return moments later with her 84 year old neighbor to introduce us.  Apparently he used to run a design firm in New York City and was hired to design honey containers at some point.  Now he is retired and tries to avoids his neighbors in the grocery store.  Sadly he failed the latter on Saturday.
