Fat Friday – St. Pattie’s Day Ice Cream Cake

In honor of St. Pattie’s Day next week Dan and I put our heads together to come up with this sweet treat with little kick.  I had originally asked Dan to come up with a recipe with beer but his only response was “(insert food) with a beer.”  After much deliberation, this is what we came up with.  Enjoy!

St. Pattie’s Day Ice Cream Cake

What you need:

6in baking dish or pan

1.5 Qt. container of Mint Chocolate Chip Ice Cream

8-10 Grasshopper Cookies

1/2 cup butter cream (optional)

1/4 cup  Smucher’s Hot Fudge

2-3 Tablespoons of Irish Cream liqueur

Put It All Together:

I used about 3/4 of the ice cream

cream ice cream with mixer until it is on the verge of melting.

Spread half of the ice cream  in pan

Crush cookies with elbow (according the Dan’s Nephew Alex, this is the only way)

Mix cookies with buttercream

spread on ice cream

spread remaining ice cream on top until covered

Put back in the freezer to set (about an hour).

When read to serve:

Combine hot fudge and liqueur and heat in the microwave.  (30 second intervals and stir until hot).

Drizzle on top with spoon, pastry bag or zip lock with a hole cut out of the corner.  (it is pretty runny so it is hard to get a good design.

Enjoy!
