Fat Friday – Scrambled Pancakes

Dan makes the pancakes in our house!  I love pancakes, they are my favorite breakfast, but I am terrible at flipping them.  Hence this week’s (er…last week’s, I was really busy sorry) Fat Friday, Scrambled Pancakes.  They are a fun alternative to the traditional round ones and best for those of us who are “flipping” challenged.

Scrambled Pancakes

What You Need:

1 batch of pancakes

1 cup of blueberries

3/4 cup of chocolate chips

6 – 9 strips of cooked bacon

Put It Together

Mix batter accourding to package.

Add blueberries and chocolate chips.

Pour enough batter for two – three pancakes in the pan (it will look like you are making one big pancake).

Break up 2 – 3 strips of bacon and add to the cooking pancake.

When the pancake gets to the point where you want to flip it, start gently scramble it like you would scrambled eggs.

Let it completely cook and be careful not to over scramble.

Top with butter and syrup and enjoy!

On the bright side, you’ll get two Fat Friday’s this week!!! Well, hopefully.  This past week I had a huge cake and I have another one this week!  I will post pictures probably tomorrow or Wednesday, so stay tuned.

    The bacon isn’t part of our typical pancake recipe, but it was good. I think breakfast sausage would have been better, maybe next time.
