Fat Friday – New Take On No Bakes

Somehow I have managed to make a Fat Friday this week.  I think  my sweet tooth got the best of me and that takes precedent over other things in life like sleep…

This Fat Friday is really easy!  It is a new take on the no bake cookie, one of Dan’s favorites.  He doesn’t know that I’ve made these so he’ll be even more excited to get home from work today!

Chocolate Covered No Bake Cookies

What you need:

  • 3 cups oatmeal, quick
  • 1 cup peanut butter chips
  • 1/4 cup peanut butter
  • 1 teaspoon vanilla
  • 1 cup sugar
  • 1 cup brown sugar, packed
  • 1/2 cup evaporated milk
  • 12 ounces of milk chocolate (visit Life’s So Sweet Chocolate for the best)

Put it all together:

In a large mixing bowl, combine oats, peanut butter chips, peanut butter, and vanilla.

Combine sugars and milk in a saucepan and bring to a boil.  Let boil for about one minute.

Pour over oatmeal mixture and stir well.

Form mixture into balls and place on waxed paper to cool.

Melt chocolate in microwave or double boiler.

Coat cooled cookies in the chocolate.

Let cool completely and ejnoy!

I am bringing this to work for my students who have to work during Slope Day because we have a show tonight.  If you don’t know what Slope Day is, it is the last day of classes at Cornell and they have a BIG celebration.  They have a concert and the kids wake up earlier than they would for classes to start having fun.  I’m volunteering again this year.  So I’ll be in the beer line making sure the kids get a little water before more beer.

    PB no bakes are a favorite at our house so I am going to have to give this recipe a try. They look absolutely delicious What goes together better than peanut butter and milk chocolate? Thanks for sharing the recipe!
